Low Carb Zucchini Fritters
This is a super easy recipe to make and can be done under 25 min.
The Low Carb Zucchini fritters are also great served as a side dish or for brekkie.






Low Carb Zucchini Fritters
Ingredients
- 2 medium Zucchini
- 1/3 Cup Ricotta
- 1 egg
- 1 cup almond flour
- 4 tbsp olive oil
- salt and pepper
- lemon zest
- 1 onion
- 1tsp garlic
- 1 tbs butter for frying

INSTRUCTIONS
- Grate the Zucchini and lemon for lemon zest
- Chop your onion finely
- Fry the onion until soft and add the garlic 30 seconds before you remove the onion from the heat
- Combine the Zucchini, Ricotta, egg, almond flour, salt and pepper, lemon zest all together and mix well.
- Divide the mixture in 8 even balls for frying
- Fry on each side for approx 10 min
- Tip: For a thicker consistency add more almond meal
